Healthier Mini Pumpkin Pies KIDS Approved!

Mini Pumpkin Pies! A Healthy Alternative

Who says we can't eat the dessert for the holidays.. or ever? 
The holiday season is here and with it you are probably thinking, "I'll just starve myself all week so I can eat all the delicious food at the Christmas party."🙋🏼‍♀️. Ya that used to be me...OR, if there was 1.. ok maybe 2.. fine, half a pie left I would be down there eating it before anyone else got to it... #guilty? 
Here is the deal. When we make little tweaks and eat fairly good 80-85% of the time, there is no reason why we can't indulge just a little. Plus, these individual cups are PERFECT with their no-traditional wonton wrapper crusts that is much lighter than pie crusts.
These Mini Pumpkin Pies fit into the portion fix, for all you fixers out there as a yellow container.

Here is the recipe:

Ingredients:

  • Nonstick cooking spray
  • 1 cup pumpkin puree
  • 1 large egg , lightly beaten
  • ½ tsp . pure vanilla extract
  • 2 Tbsp . pure maple syrup (or raw honey)
  • ¼ tsp . ground cinnamon
  • 1 dash ground ginger
  • 1 dash ground cloves
  • ¼ tsp . fine sea salt (or Himalayan salt)
  • ⅓ cup unsweetened almond milk
  • 12 wonton wrappers

Instructions:

  1. Preheat oven 325° F.
  2. Lightly coat a mini muffin pan with spray. Set aside.
  3. Combine pumpkin, egg, extract, and maple syrup in a medium bowl; whisk to blend.
  4. Add cinnamon, ginger, cloves, salt, and almond milk; mix until just blended. Set aside.
  5. Place a wrapper in each muffin cup. Press down so that wrapper fits snugly and forms a cup shape.
  6. Pour approx. 2 Tbsp. pumpkin mixture into each cup (or fill each cup about ¾ full).
  7. Bake for 15 to 20 minutes, or until knife inserted in the center of one cup comes out almost clean. Cool completely on wire rack. Refrigerate until ready to serve.
  8. Serve with some whipped cream or better yet, dairy-free coconut whipped cream! Made by whipping the cream not the liquidy milk with a little coconut sugar and pure vanilla! It is now my go to.

Mindful Eating


"Mindfulness means paying attention in a particular way, on purpose, and non judgementally." 




Optimum Nutrition is essential for overall wellness. It is the process of providing the body with sufficient nutrients through food to maintain proper health and wellness.These nutrients include, water, enzymes, minerals, adaptogens, vitamins, essential fatty acids, carbohydrates and phytonutrients.  A proper diet provides us will all of these in the right portions for our ever changing bodies. There is no fixed diet that will work for this. 
It is so important to LISTEN to our body and what it needs, but listening is much different than turning to comfort food, reaching for the easiest thing as we react to the emotional unfulfilled needs. 

Now a days we are always on the phone, watching TV, listening to music and not really paying attention to what we are actually doing or putting into our bodies. More so WHY we turn to certain things over others. We are living in the multitasking world and as some people pride themselves on being wicked multitaskers, it isn't all that great to do for your overall wellbing.


Creating mindful eating habits will greatly help with providing your body with what it needs most: to be nourished properly. 



Here are some simple guidelines to help you distinguish between mindless and (more) mindful eating and bring our bodies and minds back together.


  1. Let your body catch up with your brain - eating rapidly past full and ignoring your body’s signals vs. slowing down and eating and stopping when your body says it is full. Slowing down is one of the best ways we can get our mind and body to communicate what we really need for nutrition. The body sends a satiation signal about 20 minutes after the brain, which is why we often unconsciously overeat! So, sit down to eat, chew each bite 25 times, set your fork down between bites, etc!
  1. Know your body’s personal hunger signals - are you responding to an emotional want or responding to your body’s needs? Often we listen first to our minds, but we actually might be MORE mindful if we tune into our bodies first. Rather than just eating when we get emotional signals (whether that’s stress, sadness, frustration, loneliness, or even just boredom), we can listen to our bodies. Is your stomach growling, energy low, or feeling a little light-headed? True mindful eating is actually listening deeply to our body’s signals for hunger!

  1. Understand your motivations - eating foods that are emotionally comforting vs. eating foods that are nutritionally healthy. This is another tricky balance and, ideally, we find nourishing foods that are also satisfying and comforting. As we practice eating healthier and a greater variety of foods, we are less inclined to binge on our comfort foods, and more inclined to enjoy healthy foods, ultimately finding many foods mentally and physically satisfying as opposed to just a few.

  1. Connect more deeply with your food - Considering where food comes from vs. thinking of food as an end product. Unless you’re foraging for your food on the regular, there’s a good chance you’ve become disconnected from your food. Many of us don’t even consider where a meal comes from beyond the supermarket packaging. However, eating offers an incredible opportunity for us to connect more deeply to the natural world, the elements, and to each other! Healthy Fudgy Brownies *Fix Approved*


These were a go to for me for my refeed days last year when I was following the 80 Day Obsession timed nutrition and fitness program. They are the perfect sweetness for me and there is no guilt what so ever. There shouldn't be any guilt when enjoying your food to begin with but that is a whole other topic :p 

I have this love hate relationship with dairy. I love it but it hates me ... anyone else? I lost so much weight when I was living daily free after we found out my son was having problems with dairy through my breastmilk and now that he can have it again I was pumped to eat all the cheese again but my body keeps rejecting it. So here I am trying my dangedest to stick to a dairy free plan. 
Ingredients:
1 15oz can of chickpeas (drained and rinsed)
1/4c Earth Balance Vegan butter 
2 Large Eggs
1/2C Coconut sugar 
2tsp pure vanilla 
1/2C unsweetened cocoa powder
1/2t baking powder
dash sea salt
1/3C dairy free dark chocolate chips/chunks


Directions: 
Add everything to a blender (except chocolate chips) and blend about 3 mins until smooth. 
Add chocolate into the batter after or place on top.
Transfer batter to a greased 8x8 or 9x9 baking dish and bake at 350 for 28 mins or until tooth pick comes out clean.
If you melted your chocolate chips on top once it comes out of the oven you can spread the chocolate out to almost make an icing . (Thats how I do it )





 Cut into 16 squares . 1 square = 1Yellow

Meal Prep Monday (on a Wednesday)


I don't know about you but if my breakfast is on point the rest of my day seems to go way smoother? You feel me ? 
If I nothing else made at least my breakfast will be :p 

I am on week 3 of LIIFT4 ( round 2) just launched to ALL Beachbody on Demand subscribers yesterday (check more out about LIIFT4 here) (See why busy parents benefit from Beachbody on Demand here) 

I like to keep it simple but I also don't like to get bored. So usually I will stick with same thing one week at a time and rotate through. 

This week I have Veggie Loaded Egg cups, roasted maple sweet potato and brussel sprouts then either half a banana or a mandarin orange. For container peeps it is equivalent to 1.5G(1G from egg cups .5 from brussel sprouts) 1R (eggs), .5Y(sweet potatoes) 2t ish. 

Here is what I did. 

Veggie Loaded Egg Cups:


Ingredients: 
12 Eggs
6Cups veggies of choice
(I used 2C peppers, 1C mushrooms, .5C onion and 1.5C kale)
2t Olive Oil 
spices of choice (I used 2t oregano, 1t garlic powder, 1/4t pepper)

Directions:
Preheat oven to 350F and spray a muffin tin with oil (I don't count this but if you want to call it a tsp you can)
Sautee veggies in oil under tender crisp then add 1/4C to each muffin tin. (you use 1/4C because the veggies cook down) 
While veggies are cooking whisk up eggs and spices
Once you have divided the veggies evenly among cups, add eggs. I used a large glass measuring cup so it is easy to pour and I just pour equal amounts into each cup and go around until I am out of eggs. (some people don't like doing this because you aren't guaranteed EXACT portions but it is close enough) 

Bake 350 for 25 mins or until there is no liquid left. 
2 egg cups are equal to 1R(protein)1G(veggies) 


Roasted Sweet Potato and Roasted Brussel Sprouts

Ingredients:
3Cups halved brussel sprouts ( I use frozen baby brussel sprouts)
1tsp Evoo
dash pepper and salt (optional)

3C diced sweet potato
.5tsp Evoo
1/2T maple Syrup 
dash cinnamon

Directions:
Toss brussel sprouts with oil and seasonings then spread in a single layer on a large foil lined cookie sheet 1/2 side.
Toss sweet potato with oil, syrup and cinnamon then spread on the other side of the foil lined cookie sheet 


Bake 400F 20-25 mins. 


 Happy. Healthy. Food.

Sheet Pan Eggs


Ok you guys this was game changing for me. I love to have loaded omelets and scrambled eggs for breakfast but lately (especially in the summer) I do not want to cook or spend time in the kitchen. You feel me? 

I was watching some videos on TASTY, because I have all this free time right? (not) and came across this Time Saving Sheet Pan Egg recipe. 

I thought I could totally make that into a new breakfast for 80 Day Obsession! 

So here it is! 

Enjoy! 

SHEET PAN EGGS
Serves 8
Portion Fix Count- 1R, 1G, .5t

Ingredients:
16 Eggs
8 Cups Veggies of your choice
1/2C Almond Milk or milk of choice
2-3T mixed spices if you choose or simply 
some salt and pepper
2T oil of choice ( coconut, olive oil) divided

My veggies I like:
3 Cups rough chopped Kale/Spinach
1 Cup diced bell pepper
1.5 Cups sliced mushrooms
1 Cup cauliflower
1 Cup broccoli 
.5 Cup shredded carrots 

Others to try are zucchini, onions, chard, eggplant, celery, tomatoes. 

Directions:
Preheat oven to 350F
Add 1T coconut oil to skillet and add veggies, saute until tender crisp approx 5 mins
While veggies are cooking whisk eggs together add almond milk and spices and whisk well
Line cookie sheet with foil** and spread other tablespoon of oil over it or use spray
Add eggs to sheet then evenly distribute veggies over top of the eggs. 

*Note- if you want to make sure that there are enough veggies per serving you can use 1/2C or 1/2 green portion container to measure out and place eggs in 8 sections of the pan. The veggies cook down so if you tried to use the full green you will not have enough. Still counts as 1 green though!

** Lining sheet with foil is optional, it works for me to lift out eggs so that I can add my sausage on the sheet and pop back in oven (less dishes and less clean up!)

Pop in oven and bake between 15-20 mins or until eggs are firm to touch and there is no more liquid
Let cool then slice into 8 sections.
These freeze very well or will last in the fridge for about 5-6 days when stored properly. 

I am eating on Plan D for my second round of 80 Day Obsession, so my post workout meal is 2R, 1G, 1Y, 1t. I pair these omelette with 4 turkey sausage links or turkey bacon slices and have either a piece of whole grain toast or oatmeal (that I also premake on sundays and portion out for easy grab and go during the weekdays!)

Cilantro Lime Chicken Bowl


Ok everyone... this is AMAZING!

I was tired of my regular lunch of quinoa or rice with roasted veggies and chicken breast and decided to kick it up a notch!

I got the recipe from the Tasty App, you know those videos you see floating around facebook or IG.
I adapted it to fit the portion fox system!

I am eating in Plan E for 80 Day Obsession which is my maintenance category as I am breastfeeding as well. For my lunch time meal I use Meal option 2-- 2 veggies, 1 protein, 1 healthy carb, 1 fruit, 1 tsp, and 1 healthy fat.

Cilantro Lime Chicken Bowl

A simple delicious healthy recipe that can be prepped ahead of time for lunches or made for a yummy supper the whole family will enjoy
Yield: 4
Serving: 2 veggies (1 cup each) 1 Protein (3/4 cup) 1Carb (1/2 cup) 1tsp (olive oil)


Ingredients:
  • 4 Chicken Breasts or
  • 3 Cups Diced Chicken Breast
  • 4tsp Extra Virgin Olive Oil (divided)
  • 5 1/2 Cups Cauliflower
  • 2 Cups Bell Pepper (diced)
  • 1/2 Cup Red Onion
  • 1 Cup Corn
  • 1 Cup Black Beans
  • 2/3 Cup Cilantro (chopped)
  • 1 Lime (juiced)
  • 1 Lime (quartered)
  • 2tsp Chili Powder (optional)
  • 2 Garlic Cloves (minced)
  • Dash Salt
  • Dash Pepper
Cooking Directions
  1. Add 2tsp oil into skillet and add your chicken and salt and pepper, cook until done.
  2. Add lime juice and cilantro and cook another 5 mins until fragrant, remove from heat and transfer to a plate.
  3. Add remaining oil to the pan and add your red onion(finely chopped), bell pepper (diced) and minced garlic clove. (I use dried minced garlic from epicure) Cook over medium heat for about 5 mins then add in your riced Cauliflower**
  4. Mixing altogether cook until the cauliflower is tender crips approx. 8 minutes. (time varies depending on preference) add in optional chili powder and mix good.
  5. Using your portion fix containers divide the cauliflower mix among 4 containers 2 Green containers each.
  6. Mix your corn and your black beans in the skillet to heat up if you like or just mix them together in a bowl.
  7. Complete your prep by adding 1 Red container of chicken and 1 yellow container to each dish. Add a quarter of a lime to each. 
  8. Store in the fridge for up to 4 days.
  9. To eat, simply microwave and enjoy! 
  10. If you don't use 2 green simply cut the veggies in half and serve as 1 green container instead of 2. All other ingredients will stay the same.

Veggie Loaded Egg Muffins

For breakfast I seriously LOVE scrambled eggs or a good and loaded omelette but sometimes it can take too long after make my toddlers breakfast and getting the babies food ready. I needed to figure out short cuts to allow me to get everything done in the day! You feelin me mamas? 

I have seen multiple recipes for these egg muffins floating around the interweb and decided just to make some to MY liking. 

Here is what I did: 

Makes 18 Muffins (12 if you don't add in the milk) 

Ingredients:
12 Eggs or 24oz of Egg whites
1/2C Almond Milk*
1 Garlic Clove
1T Dried Oregano
1t Red Pepper Sansel (from epicure)*
1C Mixed Bell Peppers
1/3C Diced Red Onion
1C Spinach chopped
1/2C Mushrooms chopped

Directions:
Whisk together eggs, milk and spices 
Mix together all the veggies
Spray muffin tray with coconut oil or evoo 
Divide the veggie mix among the nuffin tins
Pour the egg mix over top
Pop in oven and bake for 30 mins or until no longer liquidy
Let cool in pan then pop out. You can store in a container in the fridge for up to 7 Days or portion them into baggies and freeze. 

*Almond milk is optional I add it to fluff up the eggs but it is totally up to you. If you opt out of using the milk then it will make about 12 muffins and also cut back your cooking time by 5-10 mins
* Red pepper sansal is optional you can really add whatever spices you want. 
** 2 Muffins is equal to 1 Red and 1 Green container for all you fixers

Why Wait Until After Pregnancy to Become Healthy and Fit?

 "I will start after I have my baby." --- This is something I continuously hear and in all honesty, it is what I thought my first pregnancy. 

Did you know that eating properly ( including proper portions and right amount of nutrients) is obviously important to reduce the risk of disease and to promote longevity in all humans but during pregnancy it is doubling important. ( something I really didn't take into account before and during my first pregnancy) 

Growing babies are more susceptible to toxins plus they need all the nutrients they can get to grow into strong and healthy babes. 

There are a wide variety of benefits to watching what you put into your body as well as maintaining your current activity or introducing light activity to keep your body moving throughout your pregnancy.

Here are a few:

~Reduces Pregnancy Complications~


There are a wide variety of complications that can occur during pregnancy like Gestational Diabetes, Hyperthyroidism or High Blood Pressure. Some of these things will just happen however YOU can decrease the chances by maintaining healthy living. Providing your body with the proper nutrients it needs can help keep blood pressure, blood sugar levels and weight at healthy levels to help avoid these complications. One thing I have learned after doing much research is Shakeology is probably the MOST healthiest thing I am putting into my body even over my prenatal vitamins. There is nothing in it that is unsafe or bad to take while pregnant. Maintaining a healthy weight for not only yourself but for baby as well will help avoid health problems in the future. Babies born with a low birth weight tend to suffer more health problems or disabilities while growing up or even their entire lifetime.
It is important to be sure to know the proper portions of each food category that you need as well as to take into account a calorie burn if you are working out or have an active lifestyle while pregnant.

I can tell you my first pregnancy was seriously the worst(I understand there are worse out there but for me this was my reality and it was NOT a pleasant experience)
I was continuously sick, I gained tons of weight, I was sore everywhere, I had high blood pressure, induction was needed, labour was awful, needed emergency C-section, never got to see my baby for hours after which resulted in unable to breastfeed like we wanted even after trying for 5 painful weeks, recovery was a very slow painful process, postpartum depression consumed me, more weight gained, relationships started to suffer and the list goes on. Living an unhealthy lifestyle doesn't just affect you physically but mentally as well and not only you but those around you. 


This pregnancy is the COMPLETE opposite because I CARE about what I am putting into my body and I am continuing on with my routines adjusting as my body tells me.

the left hand picture was my first pregnancy and I was 26weeks pregnant and the right hand is this pregnancy at 29 weeks!
