Healthy Fudgy Brownies *Fix Approved*


These were a go to for me for my refeed days last year when I was following the 80 Day Obsession timed nutrition and fitness program. They are the perfect sweetness for me and there is no guilt what so ever. There shouldn't be any guilt when enjoying your food to begin with but that is a whole other topic :p 

I have this love hate relationship with dairy. I love it but it hates me ... anyone else? I lost so much weight when I was living daily free after we found out my son was having problems with dairy through my breastmilk and now that he can have it again I was pumped to eat all the cheese again but my body keeps rejecting it. So here I am trying my dangedest to stick to a dairy free plan. 
Ingredients:
1 15oz can of chickpeas (drained and rinsed)
1/4c Earth Balance Vegan butter 
2 Large Eggs
1/2C Coconut sugar 
2tsp pure vanilla 
1/2C unsweetened cocoa powder
1/2t baking powder
dash sea salt
1/3C dairy free dark chocolate chips/chunks


Directions: 
Add everything to a blender (except chocolate chips) and blend about 3 mins until smooth. 
Add chocolate into the batter after or place on top.
Transfer batter to a greased 8x8 or 9x9 baking dish and bake at 350 for 28 mins or until tooth pick comes out clean.
If you melted your chocolate chips on top once it comes out of the oven you can spread the chocolate out to almost make an icing . (Thats how I do it )





 Cut into 16 squares . 1 square = 1Yellow

Tilapia Fish Tacos Bowl

HAPPY SUMMER SOLSTICE

Seriously, when I lived in the Yukon this was my most favorite day of the year! It was day time ALL 24hrs! Summer in the North is amazing and if you ever get a chance to travel there in the summer I say GO FOR IT!

I wanted to bring you a fresh summer recipe for the first day of summer but didn't really know what to do. Since I am still on my second round of 80 Day Obsession using timed nutrition but following the 2B Mindset principles, I wanted to create a recipe that would fit in with containers but also the PlateIt method.

And this my friends is what I came up with! I made everything from scratch! 



TILAPIA FISH TACOS/BOWL
Time: 30 mins 

For the Tacos:
Tilapia
Tortilla of choice
Coleslaw
Salsa
Avocado
Lime 

For the Bowls:
Tilapia
Riced Cauliflower or choice of base (rice, quinoa)
Salsa
Avocado
Lime
Coleslaw or greens


Tilapia

Ingredients:
4 tilapia filets
2T Cajun/ Fajita seasoning (homemade recipe below)
2T Extra Virgin Olive Oil

Directions:
Heat skillet with 2T Olive oil 
Pat fish dry then seasoning both sides with seasoning 1/2T per filet
Add to hot oil and cook about 3 mins per side ( might flip a few times to be surely cooked through) the fish should flake easily when it is done

Homemade seasoning:
I used it for my Chicken Fajita Stuffed Peppers recipe and had some left over!

4tsp Chili Powder
2tsp Paprika
1tsp Garlic
1tsp Onion powder
1tsp Oregano
1.5tsp Cumin
1/2tsp Cayenne 
dash salt 


Coleslaw 

Ingredients:
1 bag colesaw ( or make your own with shredded cabbage, carrots)
1/2C Mayonaise
1T Apple Cider Vinegar
1/8C sugar or maple syrup or honey
1/4t celery seed
pepper to taste 

Directions:
Mix it all up good and toss in with coleslaw let sit for 15 mins 

Peach Salsa

Ingredients:
2 peaches peeled and diced
2/3 of a red bell pepper
1T minced jalapeno roughly 1/2 of a jalapeno
2T white onion ( or 1/4C diced red onion I didn't have red on hand yesterday)
2 garlic cloves minced
salt and pepper to taste 
1/2T fresh lemon juice
1T fresh lime juice 
1/4C cilantro

Directions:
Mix all ingredients in a bowl and let sit for 10 mins before serving 

Put it together:

If you are making these into tacos like my family did last night, heat up a small or large whole wheat, corn or white tortilla with a little oil or butter on it to crisp it up a bit. Once it starts to bubble then they are ready. If you are using a large tortilla we usually but ours into quarters and make a taco that way. 

Start by adding some fish followed by your choice of toppings you can even add corn or black beans if you choose

To make the bowls add 1 Cup of riced cauliflower or rice to a bowl top with 1 fish filet, 1/2C salsa, 1/4 of an avocado diced, 1/4C coleslaw, lime wedge. 
That is how I did mine anyways but you can add whatever you choose and how much of what ever you choose to match your containers or plateIt method. 

*It was seriously SO dang good!! That peach salsa was BANG on man.. if your peaches were not as sweet as mine you can add a tsp of honey or maple syrup to your salsa mix but if they are perfectly ripe you shouldn't need any sweetening at all.

Sheet Pan Eggs


Ok you guys this was game changing for me. I love to have loaded omelets and scrambled eggs for breakfast but lately (especially in the summer) I do not want to cook or spend time in the kitchen. You feel me? 

I was watching some videos on TASTY, because I have all this free time right? (not) and came across this Time Saving Sheet Pan Egg recipe. 

I thought I could totally make that into a new breakfast for 80 Day Obsession! 

So here it is! 

Enjoy! 

SHEET PAN EGGS
Serves 8
Portion Fix Count- 1R, 1G, .5t

Ingredients:
16 Eggs
8 Cups Veggies of your choice
1/2C Almond Milk or milk of choice
2-3T mixed spices if you choose or simply 
some salt and pepper
2T oil of choice ( coconut, olive oil) divided

My veggies I like:
3 Cups rough chopped Kale/Spinach
1 Cup diced bell pepper
1.5 Cups sliced mushrooms
1 Cup cauliflower
1 Cup broccoli 
.5 Cup shredded carrots 

Others to try are zucchini, onions, chard, eggplant, celery, tomatoes. 

Directions:
Preheat oven to 350F
Add 1T coconut oil to skillet and add veggies, saute until tender crisp approx 5 mins
While veggies are cooking whisk eggs together add almond milk and spices and whisk well
Line cookie sheet with foil** and spread other tablespoon of oil over it or use spray
Add eggs to sheet then evenly distribute veggies over top of the eggs. 

*Note- if you want to make sure that there are enough veggies per serving you can use 1/2C or 1/2 green portion container to measure out and place eggs in 8 sections of the pan. The veggies cook down so if you tried to use the full green you will not have enough. Still counts as 1 green though!

** Lining sheet with foil is optional, it works for me to lift out eggs so that I can add my sausage on the sheet and pop back in oven (less dishes and less clean up!)

Pop in oven and bake between 15-20 mins or until eggs are firm to touch and there is no more liquid
Let cool then slice into 8 sections.
These freeze very well or will last in the fridge for about 5-6 days when stored properly. 

I am eating on Plan D for my second round of 80 Day Obsession, so my post workout meal is 2R, 1G, 1Y, 1t. I pair these omelette with 4 turkey sausage links or turkey bacon slices and have either a piece of whole grain toast or oatmeal (that I also premake on sundays and portion out for easy grab and go during the weekdays!)

Transformations from 80 Day Obsession

There is no finish line but there is a start line; This is it. 

Definition of transformation. 1 : an act, process, or instance of transforming or being transformed.

Autumn Calabrese's newest program 80 Day Obsession is changing the lives of so many people. 80 Day obsession is a fitness program for anyone who wants a firm, shaped butt and flat, cut abs but what most of us didn't realize is that it would also completely change us mentally. It includes 80 different workouts which means a new workout every single day.  It’s 80 days of focus and nutrition, spread over 13 weeks building intensity over time.

It is so amazing to see how many peoples lives are being changed because of this amazing program. Fun fact: IT IS ALL THEM. This program provides the tools and we as coaches provide the accountability but those who truly accept it, eliminate the excuses, and make an effort are the ones that will be successful! These people above and below showed up for a total of 93 days. I totally get it... 
  • getting into a new routine is hard
  • working out for an hour is hard
  • figuring out timed- nutrition is hard
  • finding the motivation can be hard

80 Day Obsession Round 1: MY RESULTS

THE RESULTS ARE IN! I HAVE COMPLETED ROUND 1 OF 80 DAY OBSESSION!!!! 

I was hoping to start doing a blog for each week but y'all...THE STRUGGLE of MOM LIFE is REAL! I basically eat, get my workout completed, nurse then pump, eat, check in on clients, nurse/pump, eat, play with the other kid (oh ya, I DO have two hahah) eat, run when I can, eat, nurse and pump, do house work and the list goes on ... How many of you can relate?

Now that I have COMPLETED my first round of 80 Day Obsession I knew I had to let everyone in on my thoughts, my struggles, my journey through round 1 because round 2 is JUST around the corner and I want YOU to join me!

Back in January I was super stoked and so grateful to get added into the EXCLUSIVE COACH test group with Autumn Calabrese herself. Being in a group with the one who CREATED the program and with many other coaches who were in the same boat as me really helped me to feel supported and inspired to fight for it especially on the days I was dragging.  It is not easy. There was lots of tough love and we had to commit to this program 100%. I mean, if you want the results that everyone else is getting you gotta follow the plan right?!

It was not easy and I am not going to sugar coat it. This shit is insane. Trying to get into a routine around eating at the right times, making sure to get your workouts in and caring for an infant and toddler along with running a business and making sure the house doesn't look like it kept getting bombed day after day was a tad tough... but you know what? 

I took a chance on MYSELF for once and GOT IT DONE! Things ended up clicking and falling into place, sacrifices had to be made but it was only for a total of 93 days so I didn't see any reason why I couldn't try.

Here is how everything went for me:

OVERALL: 

Phase 1:

I was down 12lbs and 8.5" WHAT? #truth! I couldn't believe I was pushing through 50 min workouts and eating all the food :p. Who was this and what did they do with Kristie?!

Phase 2: 

I actually gained back some weight as it was the "build" phase so I went from 157lbs to 160lbs but the inches kept coming off. Did I feel worried that I was gaining weight even though I was following the program to a T? NO! I continued to feel AMAZING. I had energy, I felt so much love for my body, I was sore all the time so I knew I was working hard. There were days (shark week days) where I let my thoughts run to lack of self love and hating the way my body was but it was ALL hormonal shit and I knew it haha. Ladies, we can't help it.. but we CAN control how we react to it. I never let myself eat shit because of the way I felt 
instead, I soldiered on and in the end it was SO worth it. 

Phase 3: 

This was probably my favourite phase of all. Why? Because I was lifting heavier, rocking out EVERY SINGLE rep and was so high on life you guys! I gained about 2lbs in the first week bringing me up to 162lbs but then dropped down to 156 by the end of phase 3. Again, I didn't let it get to me because my clothes kept fitting better and my body kept feeling amazing and doing what I asked of it! I had learned by this point that I was losing body fat even though my weight was rising. I also learned muscle doesn't weigh more than fat but when you lose fat you just replace it with muscle and depending on the amount of muscle you gain reflects in weight. 

Peak Week: 

This is where the magic happened.. I am only kidding.. it felt like it though! I followed peak week like normal as I was breastfeeding and couldn't do the deplete days. I went from 158lbs to 152lbs resulting in a TOTAL loss of 17.8lbs BOOM! The inches I lost were 17". Looking in my pictures I would never have noticed I needed to lose 17lbs but I can definitely see the toning that went on and am proud of the jiggly parts that are no longer there. 

WORKOUTS:

I was super nervous starting this program. I joined team beachbody when the shorter workouts were available(and they still are) . 21 Day Fix with 30min a day workouts, 10 min trainer (seriously, you can get toned in 30 days from 10 mins a day! That program means business yo) 22 min hard corps with just 22 min a day workouts and I liked them. I am a busy mom who (at the time) didn't want to MAKE the time for my health because I never tried before and just didn't think it could be done. So, when I saw that these workouts were average of 50 mins I thought NO THANK YOU! But then I remembered how shitty the end of 2017 was for me (I was seriously in a real funk..) and that I promised myself 2018 was the year I was going to get out of my comfort zone and try things that scared me or made me uncomfortable and DING DING DING, this was the first thing! 

After the first workout you guys I was HOOKED! It was AMAZING and I am proud to say that throughout the ENTIRE program I didn't slack or miss a workout. I became energized for life! I was stoked to get outta bed in the morning (even after little to no sleep due to a teething baby) to get the next workout in. 
In week one it was 2 sets of 15 reps of 15 moves per set. Week 2 was 3 sets of 10 reps of 15 moves per set. Week 3 was 3 sets of 10 reps but you did all three sets of each before moving on to the next move (talk about killer) Week 4 was back to 2 sets of 15 reps done twice.  
Week 1 I fought hard to stay alive but by week 4 man, what a HUGE difference in form, in stamina and in strength. 

By phase 2 I was amazed at the difference in resistance loops and weight I was using. I was able to run longer as well! The self doubt I had coming into this program was getting less and less and I started to push even harder! Never ever, I repeat, NEVER EVER have I pushed myself as hard as I pushed in this program. 

Then came phase 3 and although I was getting tired at the end of phase 2, phase 3 woke me right up again. I ended up being challenged in totally different ways and could FEEL my body tightening up and growing stronger rep by rep. 

Autumn designed the 80 different workouts for a reason. To keep your muscles guessing so you won't hit that "plateau" everyone usually runs into after doing the same program over and over. The program is designed to build intensity over time. I would never have been able to do some of the moves from phase 3 at the start but because I conditioned my body with multiple different moves throughout the program I was able to push past my limits! 


NUTRITION:

When I first learned this program was going to have a "strict" eating plan I was immediately turned off. I basically LIVE for food and I never have done well with "fad" diets or diets of any sort. So before even looking at it or knowing exactly what "timed-nutrition" was I had my mind made up I wasn't going to do it. 

As launch was drawing near and I was seeing awesome results and talking with coaches that were in the first coach test group I realized I was being a baby and needed to do some research on this whole concept. 

SIDE NOTE: Before starting 80 Day Obsession, I was actually thinking of trying something different nutritionally because I was in this plateau stage where no matter what I did (other than stick to my meal plans lol) I was just stuck in this 170-165 range for a good half a year.  Keto had become a thing, Whole 30, intermittent fasting and the 131 diet were places I was going to look.

I am SO proud to say that I didn't get sucked into those but instead started FULLY with the timed nutrition and my trusted portion control system. After all using the portion control system has helped me lose 106lbs TOTAL since starting my journey 3 years ago including the 17.8lbs I lost during 80 day obsession! Plateau no more!! 


Eat the right foods in the right amounts at certain times of the day and watch your body transform! 

Timed-nutrition is hard to get used to at first because you need to adjust and for me I had to eat almost TRIPLE the amount of food that I was used to but once you get the hang of it it is THE BOMB . COM my friends! I just made a list of foods that worked for my meals and rotated them through! I had gotten so used to it in fact, that on our recent trip to Mexico (thanks to my amazing company) I was using the timed-nutrition and proper food groupings without even realizing it! 

When you do something repeatedly over time, your mind and body adjust and it becomes a way of life! 

There are so many recipes on pinterest and The Beachbody on Demand Blog that you will have no problem! There is also specific 80 Day Obsession recipes from FIXATE also on Beachbody on Demand. My tip to you is MEAL PLAN AND PREP! It seriously makes a WORLD of difference. Also DO NOT be afraid to carry food around with you. THIS IS FOR YOU not anyone else so if others wanna talk about your eating habits who the heck cares! Be proud that you are making the effort and when it comes time to share your results you will BLOW them away (wink wink). 

The Mental Shift

Coming into this challenge I wasn't sure I could do it. I had little faith in myself and it was hard for me to lead challenge groups and tell others to believe in themselves when in fact I was struggling hard core. Deciding to start this program was a blessing in disguise. This whole journey is never ending. There is no destination. There will be ups and downs and there will be beginnings and ends.  It is a fact of life. You will hear Autumn say that in this program. 

This is a process of finding your motivation, your drive, your strength, your determination to succeed. It is a process of ELIMINATION. In order to get results and really push for your goals you will need to eliminate those dang excuses ( by telling yourself it isn't an excuse is really an excuse so to say darling) and the stories we tell ourselves to make us feel better about missing a workout or binge eating for 3 days. Getting results is just as much personal development as is pushing weight around or eating right. 

I was able to complete this program and stick to my nutrition through many sleepless nights (I have a 3 year old and an 11 month old) valentines day and Easter! (the two most chocolatey holidays :p) But I was able to do that because I KNEW I could indulge a little once my program was complete. 

You will need to change your mindset and your thinking in order to really embrace this 80 Day journey because honey, it is a total effing mental roller coaster! 

You will step on the scale and be down 5lbs then the next day you will be up 3lbs. You will feel totally badass and then the next day you will feel like a noob because you are lifting way less than the day before. You will feel so amazing and the next day you will barely be able to walk. It all comes into play with your nutrition, your self care, your sleep and YOUR MINDSET. Honestly, take your before measurements and tell your husband to hid the scale and to only bring it out at the end of each phase. If this program was based on weight and I cared about what the scale said I would have quit after week 5.. ALL it does is mess with your mindset so IGNORE THE SCALE AND FOCUS ON HOW YOU FEEL! 

TRUST THE PROCESS--->> AFTER ALL, THAT IS WHAT IT IS. A PROCESS. 


So what next? 

The day after I completed round 1 of 80 Day Obsession, we actually left for a 5 day trip to Mexico that was a rewards trip from my company. It was the perfect way to relax and end an amazing program. While I was there I got to workout with Autumn, Chris Downing from Shift Shop and Joel Freeman from Core De Force and LIFT4 (a new program coming this fall) 
April 23rd I start  A Little Obsessed ( a 5 day introductory plan to get you use to 80 Day Obsession) with a group of badass ladies who are ready to transform their lives and then starting on May 7th I will be starting ROUND 2! There is still time to join if you are ready to make the shift and become OBSESSED with living your best life!
