Mongolian Beef & Broccoli (Crockpot)

Oh boy, this is a gooder! It is def one of our NEW fav quick and easy meals. 
Flank steak works best but really any thinly sliced steak will work. 

Let's just get right to it shall we?

MONGOLIAN BEEF 

Ingredients:
1-2lbs Flank Steak sliced into strips
1/4C Cornstarch
2T Olive Oil
1/2C Brown Sugar
4 Garlic Cloves (minced)
3/4C Sodium Reduced Soy Sauce
3/4C Water
1/2C Brown Sugar
1 Thinly sliced Bell Pepper 
1C grated Carrots

1-2 heads of Broccoli chopped and steamed 
Rice, Rice Noodles, Raman Noddles, Zoodles, Spaghetti Squash, Potatoes, Egg Noddles etc to serve over. 

Directions:
1. Thinly slice steak against the grain and place in crockpot toss with olive oil and cornstarch
2. Mix water, soy sauce, garlic and brown sugar then pour over meat. Cook low for 4-6 hours or high 2-3 hours. 
3. About 30mins-1hour before serving grate your carrots and thinly slice your pepper and add to the crockpot. *this can be done in the beginning but it does overcook the veggies.

Cook the side of your choice as well as broccoli and serve meat over side with broccoli.

DUMP MEAL Crockpot Stew


Who doesn't love stew? A great hearty meal that really is great ANYTIME of year if you ask me haha.

It is super easy to throw together, freeze and pull out to cook in crockpot whenever you need! If you are like us and don't own air conditioning, it is great to have dump meals prepared for summer time especially if you are always on the run! No one wants to turn the oven on when it is 30 degrees out with no air conditioning! Am I right?

Here is what you will need:


2 lbs stew meat
6 carrots
6 ribs of celery
1 onion
4 tsp thyme
2 tsp rosemary
2 bay leaves
2C peas
2-14.5oz can diced tomatoes
1 8oz can tomato paste
2 garlic cloves
2 tsp herb and garlic seasoning (I use Epicure)
2 Tbsp Beef Bouillon (I use Epicure)
2C diced potatoes

What to do:
Label Freezer Bags ( Crock Beef Stew, Add 2 Cups h20 or beef broth. Cook LOW 6-8hrs or HIGH 3-4 hours) 
Divide contents between 2 freezer bags.
 * Be Sure to write when you made it or 3-4 months after the day you made it as an EXPIRY date.
